  • 4 fillets- about 180 grams each
  • 3 cups of cornflakes
  • Zest of a lemon and a pinch of lime zest and Orange zest (if you have them)
  • 1/4 cup sesame seeds
  • 1 medium egg
  • 1 tablespoon of milk
  • 2 tablespoons of flour
  • 2 tablespoons of oil
  • Salt and pepper

  1. Crush the corn flakes until they’re the same size as the sesame seeds. Add the sesame seeds and zest. Set aside.
  2. Mix the egg and milk.
  3. Pour the flour into another plate.
  4. Make a simple breading by following these steps: dredge the fish in the flour and shake to remove the excess flour. Quickly dip into the egg-milk mixture and then the cereal mix. It should adhere well to the fish.
  5. Lay each fillet flat on a baking sheet lined with lightly oiled parchment paper.
  6. Bake in the oven for 15 minutes.
  7. Remove from the oven and sprinkle with lemon juice.
