A crust with a twist

When you want to make pangasius with a crust, try to use ‘polenta’ or corn crumbs instead of bread crumbs. It gives a nice twist. Put the corn crumbs or polenta on both sides of the pangasius, then bake the pangasius in olive oil. Nice and hot!

Think Pangasius, think different!

Pangasius offers you endless food combinations. There is no end to creativity with this beautiful fish. How about a wonderful wrap?  You may ask yourself, okay, but how do I roll fried pangasius in a wrap? That’s a challenge indeed. Well here’s a tip on how to make a pangasius wrap by thinking different. In fact, you may call it a panga pancake instead of a wrap. You can use the same mix as you use for fish cookies. So pangasius, curry paste, coriander, mint, eggs and sugar. You combine this fish cookie mix with pan cake mix and create a pangasius pancake dough. Then, you bake like pancakes.  As simple as that. For a fine twist, you can add smoked salmon flakes in the mix, or roll a slice of smoked pangasius in the pancake. The pangasius pancake goes well with some wasabi mayonaise.

The 3Ps: Perfect Pangasius Patties

You can use different kind of fish, but pangasius is a perfect fish to prepare Asian style fish patties. It basically comes down to the neutral taste and structure that makes it an ideal fish to use. You can take either frozen or fresh fillets. Cut the fillets in pieces,  add red curry paste, egg, sugar and fish sauce and mix it all in the food processor. At the end you add mint and coriander and there you go. Perfect Pangasius Patties.

Pan fry for just 2 minutes

Pangasius is a typical tender fish. It’s good to fry, very tasty, but for the best result, you have to treat the tender fish gently. So, don’t keep it in the frying pan too long. Just 2 minutes per side will do. Don’t forget: use butter instead of oil.
